Baby Banana Pancakes

 Baby Banana Pancakes

Ever since I found out that Elodie is allergic to eggs, I have been anxious to feed her new things. I wanted her to eat something other than cereal and fruit for breakfast, so I created this super easy, egg allergy and dairy sensitivity friendly baby banana pancake recipe! They taste super good and you can add vanilla or cinnamon to them to give them more flavor.

Ingredients:

1 whole organic banana

1 cup rolled oats

1/4  cup water or non-dairy milk

Butter as needed

Directions:

1. Cut up your banana into quarters and add to a blender

2. Add your liquid and blend until banana is pureed

3. Add oats and blend until smooth

4. Use butter to help the pancakes not stick to the pan and cook on medium heat until cooked through

Makes 10 mini pancakes!

I serve them to my 11 month old in small strips!

Q & A

Frequently Asked Questions Lauren Booth I have gotten a lot of questions this last year, on social media and in person, so I put the most frequently asked ones here! Q: What is it like being a young mom? A: This is probably the most frequently asked question that I get, and it's sort of vague. Basically, I am busy all of the time. I am either playing, working, doing chores, making dinner or trying to figure out what tooth is coming in next. Having friends is not as hard as I thought it would be, as long as those friends are respectful of my time and my daughter, which they all are. The earlier days were a lot harder than they are now, because they consisted of pumping milk and trying to figure everything out. We have a routine now, which makes things a lot easier. I love that having a baby at a young age allows me to still be a kid sometimes, when we make baby paint together, or when she helps me cook by banging a spoon on her table, it's really fun. It's very fulfilling, a...

How My Body Image Affected Me

Body Image Me, 17 weeks pregnant       I never really thought too hard about what my body looked like, I thought as long as I was eating remotely healthy and I felt good it didn't really matter. I weighed 120 pounds consistently and never dieted or worked out a whole lot. I was never insecure about anything until I got pregnant.  I knew that my tummy would grow and get bigger, but I didn't really think about all of the other changes. One day I woke up to stretch marks on my stomach, thighs and breasts. I was automatically disappointed. I just assumed that I wouldn't have to deal with those things because after all, I was only nineteen. My breasts had completely changed color, my face was more filled out, I was gaining weight like I never had before. I knew that pregnancy was a woman's glow, it was the liveliest and most beautiful a woman can be. But I still wanted that smaller figure back.      I didn't hold back when I was pregnant. I ate whateve...
